Betty Parks Eubank of Lee’s Summit, Missouri, passed away peacefully on June 10, 2026, surrounded by the love of her family. She lived a life defined by compassion, service, faith, determination, and unwavering devotion to those she loved.
Born on February 26, 1931, in Chicago, Illinois, to Bill and Marie Parks, Betty grew up with a strong sense of purpose and a deep commitment to helping others. She obtained a nursing degree and worked as a labor and delivery nurse at Presbyterian Hospital in Chicago. An advocate for the healthcare and nursing professions, Betty believed deeply in the importance of healthcare, education, and service.
In 1952, Betty married Dr. David F. Eubank, and together they shared more than fifty-three years of marriage. Betty was a devoted partner throughout her husband’s more than fifty-year career as a pediatrician and allergist. She was deeply engaged in the lives of her children and grandchildren, faithfully supporting their sports, academics, and activities while encouraging their individual interests and pursuits. Curious about the world around her, Betty enjoyed traveling and was an avid reader. Her love of history extended into active support and membership in numerous historical preservation organizations, and in 2002 she was honored with the McReynolds Award from Missouri Preservation in recognition of her historic preservation efforts in Lee’s Summit.
Betty took great joy in staying connected with her extended family and remained actively involved in their lives through visits, letters, emails, and phone calls. She shared an especially close bond with her sister, Gloria Parks Terrill, and her family, and found great happiness in celebrating milestones, sharing stories, and staying engaged in the lives of her nieces and nephews.
A woman of faith, Betty was actively involved in both her church and community throughout her life. She was a devoted and charter member of Birchwood Baptist Church in Independence, Missouri, for more than 30 years and later remained an active member of First Baptist Church of Lee’s Summit.
She was preceded in death by her husband, Dr. David F. Eubank; her son, Paul W. Eubank; and her sister, Gloria Parks Terrill.
Betty is survived by her children, Susan Eubank Steinbis and Martin of Houston, Texas; David F. Eubank, Jr. and wife Josefina of Lee’s Summit, Missouri; and Mark D. Eubank and wife Sarah of Lee’s Summit, Missouri. She was a proud grandmother to Dr. Emily Steinbis AufderHeide and husband Dr. Adam AufderHeide; John Steinbis; Craig Eubank and wife Brianna; Jessie Eubank Miller and husband Ben; Rachel Eubank Fossey; and David A. Eubank. She was a cherished great-grandmother to Kate and Ryan AufderHeide, Elijah and Finley Eubank, and Cora Miller.
She is also survived by extended family members and many dear friends whose lives were enriched by her enduring friendship.
Those who knew Betty will remember her sharp intellect, dedication to service, and steadfast belief in the dignity and worth of every person. Her legacy lives on through the family she cherished, the patients she cared for, the community she served, and the countless lives she touched.
A memorial service celebrating Betty’s life will be held in September, more details to follow.
In lieu of flowers, memorial contributions may be made to Planned Parenthood or City Union Mission, organizations Betty strongly supported throughout her life, reflecting her enduring commitment to healthcare access, education, and personal dignity for all.
